Life is boiled potatoes.

This week is focused on quick and easy meals. Granted, what I consider easy, is not what everyone else would consider meals. I do, however, think that this is a great option for simple and yummy.

Southwest Bowls
Ingredients
1 cup rice
2 cups chicken stock
1 teaspoon Cumin
1 teaspoon Cayenne
1/2 a onion, sliced
1/2 a bell pepper, sliced
1 chicken breast, sliced (more if you like it meaty)
Salt and pepper
2 cloves garlic, minced
1 can corn, rinsed
1 can black beans, rinsed
Salsa
Sour Cream or Plain Yogurt
Method
Cook up the rice in the chicken stock (makes it WAY tasty) stirring in the spices once it is simmering.
Slice onion and pepper and saute in a bit of butter or olive oil.
Add chicken, salt, pepper, and garlic and saute until chicken is cooked.
in a small sauce pan, heat beans and corn in medium heat while everything else is cooking.
To serve, scoop some spicy rice into a bowl and top with any amount of chicken and veggies as you desire.
top with salsa, sour cream and cilantro (if you have it).



This is pretty much a no-fail meal of finding for most tastes and I am stoked that I have it my back pocket. Add a tortilla and you could almost be at Chipotle or something.... Ok not really...
