Pickled Onions

So you have a red onion about to turn...what do you do? 

Make pickled onions, of course! 


Not the BEST picture, but dang are they tastey! 

The recipe was super easy:
1 medium red onion, finely sliced
1 cup water
1/2 cup apple cider vinegar
2 TBS honey
2 tsp salt

Let sit for at least 2 hours, then enjoy on samdwiches, salads, and tacos!
