So for those of you are AREN'T into Doctor who (what is wrong with you?), Season 8 of the Reboot had it's Premier happen a couple weeks ago. It was an insightful, emotional, and blustering episode full of thoughts about who the Doctor is truly. The party I attended was full of amazing and thematic food.

Now, on to what I made! Jammie Dodgers!
Shortbread Cookie
Recipe:
(makes about 2 dozen 2 inch cookies)
Ingredients:
2 1/2 cups flour
6 tablespoons sugar
1 cup butter (softened)
Directions:
Combine flour and sugar. Then cut in the butter until the
mixture is mostly crumbs and starts to stick together. Your dough will be a bit
crumbly.
Form the mixture into a ball and work until smooth.
Roll out dough, cut with cookie cutters (Make sure you
have a couples of a full circle cookie and a circle with a heart in the center
cookie to make the sandwiches), and place onto un-greased cookie sheet.
Bake in a 325 degree oven for 15-20 minutes or until the
edges are lightly golden.
Note: The baking time varies according to the size of
your cookies. If your dough isn’t sticking to itself at all, add a tablespoon
more soft butter.
To make them into
Jammie Dodgers:
Using a tablespoon of high quality Jam or low bulk preserves
apply to a full circle cookie and the cover and lightly press with a circle with
a heart in the center cookie to make the sandwich.

I didn't have a tiny circle cookie cutter so I opted for Hearts. |
While rolling out the cookies, I probably added another 1/2 cup of flour to keep the dough from sticking/keeping the dough together. The firmness of the cookie was perfect as was the mildness. The cookie portion showcased the jam very well. though these were a bit more work than other cookies, they were worth it!
